Egg fried quinoa is a healthy and delicious alternative to traditional fried rice. It's made by stir-frying cooked quinoa with scrambled eggs, vegetables, and seasonings, such as soy sauce, garlic, and onion.

Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • ½ onion chopped
  • 1 red bell pepper chopped
  • 2 garlic cloves minced
  • 3 eggs
  • Salt and pepper to taste
  • 1 tablespoon soy sauce
  • 1 stalk Green onions chopped

Method
 

  1. Rinse the quinoa in a fine-mesh strainer and set aside.
  2. In a medium pot, bring the water to a boil. Add the quinoa, lower the heat, cover the pot, and cook for 15 minutes.
  3. Turn off the heat and let the quinoa sit for 5 minutes. Fluff it with a fork and set aside.
  4. In a large skillet or wok, heat the olive oil over medium-high heat.
  5. Add the onion, red bell pepper, and garlic, and sauté until tender.
  6. Push the vegetables to the side of the skillet and crack the eggs in the empty space. Scramble the eggs until cooked through.
  7. Mix the eggs with the vegetables and add the cooked quinoa.
  8. Season with salt, pepper, and soy sauce. Cook for an additional 2-3 minutes, until heated through.
  9. Garnish with green onions and serve hot.
