Achiote marinade is a type of marinade commonly used in Latin American cuisine. It's made with a paste made from annatto seeds, garlic, vinegar, citrus juice, and a variety of spices like cumin, oregano, and coriander. The marinade is typically used to marinate meats, fish, or vegetables before grilling or roasting.

Ingredients
  

  • 1/4 cup annatto seeds
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup white vinegar
  • 4 garlic cloves minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon salt
  • 1/2 tablespoon black pepper
  • 1/2 cup vegetable oil

Method
 

  1. Heat the annatto seeds in a dry skillet over medium-high heat until fragrant, about 2-3 minutes.
  2. In a blender, combine the annatto seeds, orange juice, lime juice, vinegar, garlic, oregano, cumin, salt, and black pepper. Blend until smooth.
  3. With the blender running, gradually pour in the vegetable oil until the marinade is emulsified and thickened.
  4. Pour the marinade over your meat, fish, or vegetables in a large dish or resealable plastic bag. Marinate in the refrigerator for at least 2 hours, or up to 24 hours.
  5. Remove the meat, fish, or vegetables from the marinade and discard the excess marinade. Cook as desired.
