Sweet Black Glutinous Rice in Pineapple is a Thai dessert dish. It is made by cooking black glutinous rice with coconut milk, sugar, and salt until the rice is fully cooked and has absorbed most of the liquid. The cooked rice is then spooned into a hollowed-out pineapple shell, covered with aluminum foil, and baked in the oven.

Ingredients
  

  • 1/2 cup black glutinous rice soaked for at least 2 hours
  • 1 pineapple
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1/2 cup brown sugar
  • 1/2 tablespoon salt

Method
 

  1. Cut off the top of the pineapple and hollow out the inside, leaving a 1/2 inch shell. Set aside.
  2. Rinse the soaked black glutinous rice and drain well.
  3. In a pot, combine the black glutinous rice, coconut milk, water, brown sugar, and salt. Bring to a boil over high heat.
  4. Once boiling, reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the rice is fully cooked and has absorbed most of the liquid.
  5. Remove the pot from the heat and let the rice cool for a few minutes.
  6. Spoon the cooked rice into the hollowed-out pineapple shell.
  7. Cover the pineapple with aluminum foil and bake in a preheated oven at 350°F for about 20-25 minutes.
  8. Remove the foil and bake for an additional 10 minutes to brown the top.
  9. Remove from the oven and let cool for a few minutes before serving.
