Quinoa Chocolate Cake

Method
- Preheat your oven to 350°F.
- Grease a 9-inch round cake pan with coconut oil or cooking spray.
- In a blender or food processor, blend the cooked quinoa with almond milk until smooth.
- Add eggs, vanilla, and coconut sugar to the blender and blend until smooth.
- Add cocoa powder, baking powder, baking soda, salt, and vegetable oil to the blender and blend until smooth.
- Pour the batter into the greased cake pan and smooth out the top.
- Bake for 30-35 minutes or until a toothpick comes out clean when inserted in the center.
- Let the cake cool for 5-10 minutes before serving.
