Preheat your oven to 350°F.
Grease a 9-inch round cake pan with coconut oil or cooking spray.
In a blender or food processor, blend the cooked quinoa with almond milk until smooth.
Add eggs, vanilla, and coconut sugar to the blender and blend until smooth.
Add cocoa powder, baking powder, baking soda, salt, and vegetable oil to the blender and blend until smooth.
Pour the batter into the greased cake pan and smooth out the top.
Bake for 30-35 minutes or until a toothpick comes out clean when inserted in the center.
Let the cake cool for 5-10 minutes before serving.
