For the dough:
- 2 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp instant yeast
- 1/2 tsp salt

Instructions
- In a large mixing bowl, combine the flour, sugar, yeast and salt.
- Add the melted butter, milk, water and egg. Mix together until you have a dough.
- Knead the dough on a floured surface for 5-7 minutes until it becomes smooth and elastic.
- Place the dough in a clean bowl, cover it with a clean tea towel and leave to rise for 1 hour until it has doubled in size.
- Preheat your oven to 375°F.
- Grease a muffin tin with cooking spray or butter.
- In a small bowl, combine the brown sugar, cinnamon, currants and softened butter.
- On a floured surface, roll out the dough into a rectangle shape, about 12×9 inches.
- Spread the filling evenly over the dough.
- Roll up the dough from the long edge and cut it into 12 equally sized pieces.
- Place each piece into the muffin tin.
- Cover the muffin tin with a clean tea towel and leave to raise for 30 minutes.
- Brush the tops of the buns with the beaten egg.
- Bake in the preheated oven for 18-20 minutes or until the buns are golden brown.
- Once cooked, take the Chelsea bun cups out of the oven and leave them to cool on a wire rack.
- Serve and enjoy!
