- Place the dough in a clean bowl, cover it with a clean tea towel and leave to rise for 1 hour until it has doubled in size.
- Preheat your oven to 375°F.
- Grease a muffin tin with cooking spray or butter.
- In a small bowl, combine the brown sugar, cinnamon, currants and softened butter.
