- 1 pound pork boneless, diced
- 4 cups cooked rice (preferably chilled)
- 2 tablespoons vegetable oil

- 2 eggs beaten

- 1 tablespoon oyster sauce (optional)

Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced pork and cook until browned and cooked through. Remove the pork from the skillet and set it aside.

- Finally, add the cooked pork back to the skillet and continue stirring for another minute or two until everything is heated through.
- Remove from heat and garnish with chopped green onions or cilantro if desired.
