Ingredients
- 8 oz. bowtie pasta
- 1 cup corn fresh or frozen
- 3 tbsps pesto sauce homemade or store-bought
- 1 tbsps extra-virgin olive oil
- ½ large lemon juiced
- ¼ cup basil fresh, chopped + more for garnish
- Sea salt to taste
- black pepper to taste
- 2 cups cherry tomatoes halved
- 8 oz. mozzarella cheese pearl fresh or Ciliegine
Instructions
- Cook pasta according to package directions in salted boiling water, adding corn during the last 3 minutes of cooking time.
- Drain the pasta and add to a large mixing bowl. Add pesto, olive oil, lemon juice, and fresh basil.
- Stir to combine and season with sea salt and black pepper, to taste.
- Add the tomatoes and mini mozzarella balls. Gently stir and refrigerate for 30 minutes to marry flavors before serving.
