Caprese Bowtie Pasta Salad is a delicious and refreshing dish that typically includes cooked bowtie pasta, fresh cherry tomatoes, mozzarella cheese, fresh basil leaves, olive oil, balsamic glaze, salt, and pepper.

Ingredients
  

  • 8 oz. bowtie pasta
  • 1 cup corn fresh or frozen
  • 3 tablespoons pesto sauce homemade or store-bought
  • 1 tablespoons extra-virgin olive oil
  • ½ large lemon juiced
  • ¼ cup basil fresh, chopped + more for garnish
  • Sea salt to taste
  • black pepper to taste
  • 2 cups cherry tomatoes halved
  • 8 oz. mozzarella cheese pearl fresh or Ciliegine

Method
 

  1. Cook pasta according to package directions in salted boiling water, adding corn during the last 3 minutes of cooking time.
  2. Drain the pasta and add to a large mixing bowl. Add pesto, olive oil, lemon juice, and fresh basil.
  3. Stir to combine and season with sea salt and black pepper, to taste.
  4. Add the tomatoes and mini mozzarella balls. Gently stir and refrigerate for 30 minutes to marry flavors before serving.
  5. Garnish with additional fresh basil. Enjoy!

Notes

If fresh mozzarella balls such as Ciliegine or Pearls are not unavailable in your area, simply cut your mozzarella into ½” cubes.
