Ingredients
- 4 chicken breasts boneless, skinless
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 can sauerkraut (14 oz), drained and rinsed
- 1 cup chicken broth
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- fresh parsley chopped for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Cook until softened, about 3-4 minutes.
- Add the sauerkraut, chicken broth, and caraway seeds to the skillet. Stir to combine.
- Return the chicken breasts to the skillet, nestling them into the sauerkraut mixture. Cover and simmer for 20-25 minutes or until the chicken is cooked through.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve the Chicken with Sauerkraut hot, garnished with chopped fresh parsley.
- Enjoy!
