Okra soup is a delicious and popular dish in many West African countries, especially Nigeria and Ghana. It is a flavorful soup made with okra, a green vegetable with a unique texture, along with other ingredients like meat (such as beef or fish), stock or broth, onions, tomatoes, and spices. The okra helps to thicken the soup. It is often served with a side of rice or fufu (a starchy side dish).

Ingredients
  

  • 1 pound fresh okra chopped
  • 1 pound meat (beef, chicken, or fish), cut into bite-sized pieces
  • 1 onion chopped
  • 2 tomatoes chopped
  • 3 cups meat broth or vegetable broth
  • 2 tablespoons palm oil or vegetable oil
  • 2 teaspoons ground crayfish (optional)
  • Salt and pepper to taste
  • 1 teaspoon ground chili pepper (optional)
  • Fresh parsley or cilantro for garnish

Method
 

  1. Heat the oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the chopped tomatoes and cook until they soften, stirring occasionally.
  3. Add the meat to the pot and cook until browned on all sides.
  4. Pour in the broth and bring to a simmer.
  5. Add the chopped okra to the pot and stir well to combine with the other ingredients.
  6. Season with salt, pepper, ground crayfish, and chili pepper (if using). Adjust seasoning to taste.
  7. Cover the pot and let the soup simmer for about 20-30 minutes, stirring occasionally.
  8. Once the okra is tender and the flavors have melded together, remove from heat.
  9. Serve the okra soup hot, garnished with fresh parsley or cilantro. Enjoy!
