Method
- Soak the black-eyed peas in water overnight or for at least 4 hours to soften.
- Drain the soaked peas and blend them to a smooth paste, adding a little water if needed.
- Transfer the paste to a bowl and mix in the chopped onions, bell pepper, scotch bonnet peppers, vegetable oil, crayfish, bouillon powder, and salt. Adjust seasoning to taste.
- Prepare your steaming pot by adding water and bringing it to a simmer.
- Line your molds or containers with banana leaves or foil and fill them with the Moin Moin mixture.
- Place the filled molds in the steaming pot and steam for about 45-60 minutes or until cooked through.
- Once cooked, allow the Moin Moin to cool slightly before serving.
- Enjoy!
