Moin Moin is a delicious and popular Nigerian dish made from peeled black-eyed peas, onions, peppers, and spices. It is typically steamed or baked to create a savory pudding-like texture.

Ingredients
  

  • 2 cups black-eyed peas
  • 1 medium onion chopped
  • 1 red bell pepper chopped
  • 2-3 scotch bonnet peppers chopped (adjust to taste)
  • 1/4 cup vegetable oil
  • 1 teaspoon ground crayfish (optional)
  • 1 teaspoon bouillon powder or cube
  • Salt to taste
  • Banana leaves or foil for wrapping

Method
 

  1. Soak the black-eyed peas in water overnight or for at least 4 hours to soften.
  2. Drain the soaked peas and blend them to a smooth paste, adding a little water if needed.
  3. Transfer the paste to a bowl and mix in the chopped onions, bell pepper, scotch bonnet peppers, vegetable oil, crayfish, bouillon powder, and salt. Adjust seasoning to taste.
  4. Prepare your steaming pot by adding water and bringing it to a simmer.
  5. Line your molds or containers with banana leaves or foil and fill them with the Moin Moin mixture.
  6. Place the filled molds in the steaming pot and steam for about 45-60 minutes or until cooked through.
  7. Once cooked, allow the Moin Moin to cool slightly before serving.
  8. Enjoy!
