Ingredients
- 4 pork chops
- 1 tablespoon olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 8 oz mushrooms sliced
- 1 cup chicken broth or vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- fresh parsley chopped for garnish
Instructions
- Season the pork chops with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Sear the pork chops for about 3-4 minutes per side, or until nicely browned. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and garlic. Cook until softened, about 2-3 minutes.
- Add the sliced mushrooms and cook until they release their juices and start to brown, about 5-6 minutes.
- Pour in the broth and bring to a simmer. Let it cook for a few minutes to reduce slightly.
- Stir in the heavy cream and dried thyme. Season with salt and pepper to taste.
- Return the pork chops to the skillet and spoon the mushroom sauce over them. Simmer for an additional 5-10 minutes, or until the pork chops are cooked through.
- Garnish with chopped fresh parsley before serving.
- Enjoy!
