Ingredients
  

  • 2 cups chicken cooked and shredded
  • 2 cups shredded cheese (such as cheddar or Monterey Jack)
  • 1 red bell pepper diced
  • 1 small onion diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Cooking oil or butter for cooking

Method
 

  1. In a mixing bowl, combine the shredded chicken, diced bell pepper, diced onion, chili powder, cumin, salt, and pepper. Mix well to combine all the ingredients.
  2. Lay out 4 tortillas on a flat surface. Divide the chicken mixture evenly among the tortillas, spreading it out in a single layer on one half of each tortilla.
  3. Sprinkle shredded cheese over the chicken mixture on each tortilla.
  4. Fold the empty half of the tortilla over the filling to create a half-moon shape.
  5. Heat a skillet or griddle over medium heat and add a little oil or butter.
  6. Place the filled tortillas in the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  7. Remove from the skillet and let cool slightly before cutting into wedges.
  8. Serve hot with your favorite toppings like sour cream, salsa, or guacamole.
  9. Enjoy!
