  • 1 cup mashed potatoes (about 2 medium potatoes)
  • 2 1/4 tablespoon active dry yeast
  • 1/4 cup warm water
  • 2 tablespoon sugar
  • 1/4 cup butter softened
  • 1 tablespoon salt
  • 3 1/2 cups all-purpose flour
  • 1 egg for egg wash (optional)

  1. In a small bowl, dissolve the yeast in warm water with a pinch of sugar. Let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the mashed potatoes, sugar, butter, and salt. Add the yeast mixture and mix well.
  3. Gradually add the flour to the mixture, kneading the dough until it forms a smooth and elastic ball. You may need to add a little more flour if the dough is too sticky.
  4. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
  5. Punch down the dough and shape it into a loaf. Place the dough in a greased loaf pan, cover it, and let it rise for another 30-45 minutes.
  6. Preheat your oven to 350°F (180°C). Optional: Beat an egg and brush it over the top of the loaf for a shiny finish.
  7. Bake the bread for about 30-35 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
  8. Allow the bread to cool before slicing and enjoying!
