Ingredients
  

  • 2 cups grated coconut or diced coconut
  • 1 cup brown sugar
  • 1/4 cup water
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Method
 

  1. In a medium saucepan, combine the brown sugar, water, ginger, cinnamon, nutmeg, and salt. Stir well to combine over medium heat until the sugar has dissolved.
  2. Add the grated coconut to the saucepan and mix thoroughly, ensuring the coconut is evenly coated with the sugar syrup.
  3. Reduce the heat to low and simmer the mixture, stirring occasionally, for about 15-20 minutes. The coconut mixture should thicken and become sticky.
  4. Once the mixture has thickened, remove the saucepan from the heat and let it cool slightly.
  5. Using your hands or a spoon, drop small spoonfuls of the coconut mixture onto a parchment-lined baking sheet. Leave some space between each drop.
  6. Allow the drops to cool completely and firm up at room temperature. This may take around 30 minutes to an hour.
  7. Once the drops have cooled and hardened, they are ready to be enjoyed! Serve them as a tasty treat or pack them in an airtight container for later.
