French Onion Soup
Ingredients
- 4 large onions thinly sliced
- 4 tablespoons butter
- 2 tablespoons olive oil
- 4 cups beef broth
- 1 cup red wine (optional)
- 1 teaspoon sugar
- Salt and pepper to taste
- 4 slices crusty bread
- 1 cup shredded Gruyère or Swiss cheese
Instructions
- In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until caramelized and golden brown, about 30-40 minutes.
- Sprinkle the sugar over the onions and continue to cook for another 5 minutes until the onions are deeply caramelized.
- Pour in the beef broth and red wine (if using) and bring the soup to a simmer. Season with salt and pepper to taste.
- Preheat your broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of bread and a generous amount of shredded cheese.
- Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes.
- Carefully remove from the oven (be careful, the bowls will be hot!) and let cool slightly before serving.
- Enjoy!
