Chicken Adobo
Ingredients
- 2 lbs chicken pieces (such as thighs and drumsticks)
- 1/2 cup soy sauce
- 1/2 cup vinegar (white vinegar or apple cider vinegar)
- 1 cup water
- 6 cloves garlic minced
- 1 onion sliced
- 1 teaspoon whole peppercorns
- 2 bay leaves
- 2 tablespoons cooking oil
- Salt and pepper to taste
- Steamed rice for serving
Instructions
- In a large bowl, combine soy sauce, vinegar, water, garlic, peppercorns, and bay leaves. Add the chicken pieces and marinate for at least 30 minutes, or overnight for best results.
- Heat the cooking oil in a large pot over medium heat. Add the sliced onions and cook until softened.
- Remove the chicken pieces from the marinade, reserving the marinade. Add the chicken to the pot and brown on all sides.
- Pour in the marinade mixture and bring to a boil. Reduce heat to low, cover, and simmer for about 30-40 minutes or until the chicken is tender.
- Season with salt and pepper to taste.
- Serve the Chicken Adobo hot over steamed rice.
- Enjoy!
