Shrimp Scampi Cheesecake
Ingredients
- 1 tablespoon olive oil
- 1 onion
- 6 teaspoons garlic minced
- 1 pound shrimp fresh, peeled and deveined
- 12 shells puff pastry baked
- 4 tablespoons butter optional to margarine
- 3 packages cream cheese softened, 8 ounce
- 4 eggs
- 1/2 cup heavy cream
- 16 ounces smoked Gouda grated
- 2 teaspoons salt
- 4 tablespoons margarine optional to butter
Instructions
- Preheat oven to 350 degrees F.
- Add oil to skillet and saute onions and garlic until tender over low heat. Remove garlic and onion in a separate container for use later. Cut shrimp into 1/2 inch pieces, reserving about 12 uncut for garnish. In a large skillet over medium heat, melt butter. Add all shrimp and previously saute garlic. Cook shrimp for about 4 minutes or until pink. Remove whole shrimp for garnishing later.
- Remove inner portion of puffy pastry shells. In a bowl, beat cream cheese until creamy. Next add one egg at a time and beat until well mixed. Add cream, Gouda, onions, shrimp and salt.
- Spoon fill mixture into puff pastry shells. Bake in preheated oven for 20 minutes or until filling is browned on top. Garnish with whole shrimp and chopped chives.
