- In a large pot, sauté the onion, garlic, bell pepper, and carrot in a bit of oil over medium heat until softened.
- Add the cumin and chili powder, stirring for about 1 minute until fragrant.
- Add the black beans and vegetable broth to the pot. Bring to a simmer and let it cook for about 20-30 minutes.
- Use an immersion blender to partially blend the soup to your desired consistency. Alternatively, you can transfer a portion of the soup to a blender and blend until smooth, then return it to the pot.
- Season with salt and pepper to taste.
- Serve the soup hot, topped with chopped cilantro, avocado slices, and a squeeze of lime juice if desired.
