Ingredients
  

  • 2 cans black beans (15 oz each) drained and rinsed
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 carrot diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
Optional toppings:
  • cilantro chopped
  • avocado slices
  • lime wedges

Method
 

  1. In a large pot, sauté the onion, garlic, bell pepper, and carrot in a bit of oil over medium heat until softened.
  2. Add the cumin and chili powder, stirring for about 1 minute until fragrant.
  3. Add the black beans and vegetable broth to the pot. Bring to a simmer and let it cook for about 20-30 minutes.
  4. Use an immersion blender to partially blend the soup to your desired consistency. Alternatively, you can transfer a portion of the soup to a blender and blend until smooth, then return it to the pot.
  5. Season with salt and pepper to taste.
  6. Serve the soup hot, topped with chopped cilantro, avocado slices, and a squeeze of lime juice if desired.
  7. Enjoy!
