- 3 cups white rice cooked (preferably cold)
- 2 chicken breasts diced
- 2 eggs beaten
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 green onions chopped
- 3 tablespoons soy sauce

- 2 cloves garlic minced
- 1 teaspoon ginger minced

Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

- Add the cooked rice to the pan, breaking up any clumps. Stir well to combine with the vegetables and eggs.
- Add the cooked chicken back to the pan. Pour the soy sauce and oyster sauce over the mixture and stir to combine.
- Add the chopped green onions and season with salt and pepper to taste. Stir-fry for another 2-3 minutes until everything is heated through.
