- In a shallow dish, mix together the cornmeal, flour, salt, paprika, garlic powder, onion powder, and black pepper.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
- Dredge each catfish fillet in the cornmeal mixture, making sure to coat both sides.
- Carefully place the coated catfish fillets in the hot oil, working in batches if necessary to avoid overcrowding the skillet.
- Fry the catfish for about 3-4 minutes per side, or until golden brown and crispy.
- Once cooked, remove the catfish from the oil and place on a paper towel-lined plate to drain any excess oil.
- Serve the fried catfish hot with your favorite sides, such as coleslaw, hush puppies, or tartar sauce.
