Ingredients
  

  • 4 catfish fillets
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Method
 

  1. In a shallow dish, mix together the cornmeal, flour, salt, paprika, garlic powder, onion powder, and black pepper.
  2. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
  3. Dredge each catfish fillet in the cornmeal mixture, making sure to coat both sides.
  4. Carefully place the coated catfish fillets in the hot oil, working in batches if necessary to avoid overcrowding the skillet.
  5. Fry the catfish for about 3-4 minutes per side, or until golden brown and crispy.
  6. Once cooked, remove the catfish from the oil and place on a paper towel-lined plate to drain any excess oil.
  7. Serve the fried catfish hot with your favorite sides, such as coleslaw, hush puppies, or tartar sauce.
