- In a mixing bowl, combine the cooked Arborio rice, mozzarella cheese, Parmesan cheese, parsley, salt, and pepper. Mix well to combine all ingredients.
- Take a small portion of the mixture and shape it into small balls, about the size of a golf ball.
- Dip each ball into the beaten eggs, then roll them in breadcrumbs until they are fully coated.
- Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 350°F (180°C).
- Carefully place the cheese balls into the hot oil, a few at a time, and fry until they are golden brown and crispy, about 2-3 minutes.
- Remove the fried cheese balls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve the Italian Cheese Balls hot as a delicious appetizer or snack.
