Ingredients
  

  • 1.5 lbs chicken breasts boneless, skinless cut into 1-inch cubes
  • 1 bell pepper cut into chunks
  • 1 red onion cut into chunks
  • 8 oz mushrooms cleaned and halved
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a bowl, mix together olive oil, soy sauce, garlic, paprika, cumin, salt, and pepper. Add the chicken cubes and marinate for at least 30 minutes (or overnight for best flavor).
  2. Preheat grill to medium-high heat or preheat the oven to 400°F (200°C).
  3. Thread the marinated chicken, bell pepper, onion, and mushrooms onto the skewers, alternating between the ingredients.
  4. Grill the skewers for 10-12 minutes, turning occasionally, or until the chicken is cooked through and vegetables are tender. If using the oven, place the skewers on a baking sheet and bake for 20-25 minutes, turning halfway through.
  5. Serve the chicken kabobs hot with your favorite side dishes like rice, salad, or grilled vegetables.
