- In a bowl, mix together olive oil, soy sauce, garlic, paprika, cumin, salt, and pepper. Add the chicken cubes and marinate for at least 30 minutes (or overnight for best flavor).
- Preheat grill to medium-high heat or preheat the oven to 400°F (200°C).
- Thread the marinated chicken, bell pepper, onion, and mushrooms onto the skewers, alternating between the ingredients.
- Grill the skewers for 10-12 minutes, turning occasionally, or until the chicken is cooked through and vegetables are tender. If using the oven, place the skewers on a baking sheet and bake for 20-25 minutes, turning halfway through.
- Serve the chicken kabobs hot with your favorite side dishes like rice, salad, or grilled vegetables.
