Roast sweet potatoes are delicious sweet potatoes that are typically cut into cubes or slices, tossed in oil and seasonings, and then roasted in the oven until they are tender and caramelized. They make a wonderful side dish or even a snack.

Ingredients
  

  • 4 medium sweet potatoes peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, paprika, garlic powder, and onion powder until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for about 30-35 minutes, or until the sweet potatoes are tender and starting to caramelize, stirring halfway through.
  5. Once the sweet potatoes are cooked, remove them from the oven and sprinkle with chopped fresh parsley for garnish.
  6. Serve hot and enjoy!
