In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, paprika, garlic powder, and onion powder until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for about 30-35 minutes, or until the sweet potatoes are tender and starting to caramelize, stirring halfway through.
Once the sweet potatoes are cooked, remove them from the oven and sprinkle with chopped fresh parsley for garnish.
