Ingredients
  

  • 3 cups all purpose flour
  • 1 pack red kidney peas
  • 3 lbs beef bone with meat cut into chunks
  • 2 cloves garlic crushed
  • 6 medium carrots cubed half. Other half cut into blocks
  • 2 whole corn cut each in into 3
  • 4 medium potatoes cut into halves
  • 2 whole Scotch bonnet pepper 1 green, 1 ripe
  • 1 sprig thyme
  • 2 packs Grace® Cock Soup Mix
  • 1 medium turnip cut in 1/2 inches cube
  • 2 medium sweet potatoes cut 8 blocks
  • 1 stalk scallion
  • 4 whole allspice
  • 1 whole cho cho (chayote squash), peel and cut into cubes, 1/2 inch
  • 1 stick celery chop in large piece
  • 1 tablespoon coconut powder

Instructions
 

Prepare vegetables:

  • Wash and prepare vegetables. Separate cut turnip.

Prepare kidney peas and beef:

  • Cut beef into medium size parts.
    Wash kidney beans. Peas will cook faster if soaked overnight in cold water.

Cook beef and beans:

  • To decrease cooking time add beef and peas to a pressure cooker and pressure for about 30 minutes. Add additional 10 minutes until meat and peas are cooked. Set aside.

Prepare dumplings:

  • Combine together flour 1/2 cup water, pouring slowly, mixing and kneading until flour has a doughy consistency. If sticky, add more flour to mixture until doughy consistency.
  • Pull up a small chunk of flour about 1/4 handful and make in a ball. Knead dough inwards with fingers then indent the middle so that it looks like a doughnut
    Set aside.

Start stock pot going:

  • To a large pot add a gallon of water and bring to boil. Add turnip and boil for 10 minutes.
  • Add dumplings to pot and cook for 10 minutes.
  • Add beef and red peas stock and cook for 10 minutes.
  • Add yam, corn, potatoes, sweet potatoes and cho cho (Chayote squash). Cook for another 10 minutes.
  • Add chopped carrots, carrot blocks and cook for another 10 minutes.
  • Add Grace® Cock Soup Mix (2 packs), garlic, all spice, Scotch bonnet pepper, thyme, celery, tablespoonful of coconut powder and scallion. Simmer for 10 minutes.
  • Serve hot or warm.
