Ingredients
  

  • 1 can corned beef
  • 1 small cabbage shredded
  • 1 onion diced
  • 2 cloves garlic minced
  • 1-2 tomatoes diced
  • 1 Scotch bonnet pepper (optional, for heat)
  • 1 teaspoon thyme
  • Salt and pepper to taste

  1. Heat some cooking oil in a large skillet over medium heat.
  2. Add the diced onions and minced garlic and sauté until fragrant.
  3. Add the corned beef to the skillet and break it up with a spoon, cooking until it starts to brown.
  4. Stir in the diced tomatoes, thyme, and Scotch bonnet pepper (if using) and cook for a few minutes.
  5. Add the shredded cabbage to the skillet and mix well with the corned beef mixture.
  6. Cover the skillet and let the cabbage cook down for about 10-15 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Once the cabbage is soft and cooked through, remove from heat.
  9. Serve hot and enjoy!
