Ingredients
  

Ranchero Salsa Fresca Ingredients:
  • 3 medium tomatoes seeded and roughly chopped*
  • 3 cloves garlic finely minced
  • 1 large bell pepper yellow, orange or green pepper, chopped
  • 1/2 cup green onions sliced, about 5
  • 2 tablespoons cilantro fresh, chopped plus extra for garnish, if desired
  • 1 jalapeno pepper finely chopped, seeds removed**
  • 1 large lime freshly juiced
  • 1 tablespoon olive oil
  • 1/4 tablespoon salt
Hamburger Ingredients:
  • 1 1/2 lbs. ground beef lean
  • 1 mediim onion finely chopped
  • ½ tablespoon dried oregano
  • ½ tablespoon cumin
  • Kosher salt to taste
  • Black Pepper to taste
To Plate & Serve:
  • 1 bag tortilla chips corn, any color
  • 1 head iceberg lettuce medium, thinly sliced
  • 6 tablespoons Sour cream
  • cilantro chopped, for garnish, optional

Method
 

  1. In a non-reactive medium bowl, combine all salsa ingredients. Chill at least one hour. Taste and adjust salt if needed.
  2. Mix ground beef, onion, oregano, cumin, salt and pepper, to taste. Shape into 6 ½” thick round patties.
  3. Grill or broil 5-7 minutes on each side or until cooked to desired doneness.
  4. When ready to serve, arrange a layer of tortilla chips in the middle of each serving plate.
  5. Top with a layer of Ranchero Salsa Fresca. Add a layer of lettuce slightly larger than the size of your burger.
  6. Add the burger to the center of the plate. Top with sour cream. Garnish with cilantro. Enjoy.

Notes

Prepare Ranchero Salsa Fresca first as the flavors need to blend for at least one hour.
*When sweet summer tomatoes are not available, substitute 1 can diced tomatoes, drained.
**To Make Salsa Hotter: Add an additional 1 or 2 fresh jalapeños (Hot), 1 or 2 fresh serranos (Hotter) 1 habanero chili (Hottest)
