Ingredients
  

  • 2 teaspoons vegetable oil
  • 1-¼ pound ground turkey
  • 1 cup onion diced
  • 2 cups zucchini sliced
  • 2 cups mushrooms sliced
  • 3 tablespoons Pesto Sauce
  • 1 handful Parmesan cheese grated for topping
  • sprinkle parsley fresh, chopped for topping

Method
 

  1. Heat oil in a large skillet and brown ground turkey. Once cooked remove and set aside.
  2. Add onion and saute until translucent, then add zucchini and mushrooms. Cook for about 5-8 minutes or until vegetables are tender.
  3. Add ground turkey back into pan with vegetables and stir in pesto sauce, cover and lower heat. Simmer 5 minutes.
