In a bowl, beat the eggs and season with salt and pepper.
Add the chopped onions, red bell pepper, and green bell pepper to the beaten eggs. Mix well.
Open the cans of corned beef and break them apart in the bowl with the egg mixture. Stir to combine everything evenly.
Heat some cooking oil in a frying pan over medium heat.
Scoop a portion of the corned beef mixture and pour it into the hot pan, forming an omelet shape. Cook until the bottom is golden brown.
Carefully flip the omelet to cook the other side until golden brown as well.
Repeat the process with the remaining corned beef mixture to make more omelets.
Once cooked, transfer the Tortang Carne Norte to a serving plate.
Serve hot with rice and your favorite condiment, such as ketchup or vinegar dipping sauce.
