Method
- Heat the vegetable oil in a wok or frying pan over medium heat.
- Add the minced garlic and ginger and stir fry for about 30 seconds until fragrant.
- Add the pumpkin pieces to the wok and stir fry for about 5-7 minutes until they start to soften but are still slightly firm.
- Add the soy sauce, oyster sauce (if using), and sliced red chili. Stir well to combine.
- Continue to stir fry for another 2-3 minutes until the pumpkin is cooked through but still holds its shape.
- Season with salt and pepper to taste.
- Remove from heat and garnish with sliced spring onions.
- Serve hot as a side dish with steamed rice.
