Ingredients
  

  • 1 small pumpkin peeled and cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 red chili sliced, (optional)
  • Salt and pepper to taste
  • Spring onions for garnish

Method
 

  1. Heat the vegetable oil in a wok or frying pan over medium heat.
  2. Add the minced garlic and ginger and stir fry for about 30 seconds until fragrant.
  3. Add the pumpkin pieces to the wok and stir fry for about 5-7 minutes until they start to soften but are still slightly firm.
  4. Add the soy sauce, oyster sauce (if using), and sliced red chili. Stir well to combine.
  5. Continue to stir fry for another 2-3 minutes until the pumpkin is cooked through but still holds its shape.
  6. Season with salt and pepper to taste.
  7. Remove from heat and garnish with sliced spring onions.
  8. Serve hot as a side dish with steamed rice.
