Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the flour, oats, coconut, and sugar.
In a small saucepan, melt the butter and golden syrup over low heat until smooth.
Dissolve the baking soda in 1 tablespoon of boiling water, then add it to the butter mixture.
Pour the butter mixture into the dry ingredients and mix well until a dough forms.
If using, fold in the chopped nuts and dried fruit.
Take small portions of the dough and roll into balls, then flatten slightly on the baking sheet.
Bake for 12-15 minutes or until the cookies are golden brown.
Allow the cookies to cool on a wire rack before enjoying.
