Start by preparing the banana flower. Remove the outer layers and discard them. Slice the tender inner part of the banana flower thinly and soak in water with a little lemon juice to prevent browning.
Heat oil in a large skillet or wok over medium heat. Add minced garlic, ginger, and red chili. Stir-fry for about 1 minute until fragrant.
Add the sliced banana flower to the skillet and stir-fry for 3-4 minutes until slightly tender.
Add the chopped chives to the skillet and continue stir-frying for another 2-3 minutes.
Season the stir-fry with soy sauce, oyster sauce, salt, and pepper. Stir well to combine all the flavors.
Cook for an additional 2-3 minutes until the vegetables are cooked but still slightly crunchy.
Serve the Sliced Banana Flower and Chive stir-fry hot as a side dish or over steamed rice.
