- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the diced potatoes and seafood stock or clam juice to the pot. Bring to a simmer and cook until the potatoes are tender.
- Stir in the heavy cream, milk, thyme, salt, and pepper. Simmer for another 5-10 minutes.
- Add the mixed seafood to the pot and cook until seafood is cooked through, about 5 minutes.
- Adjust seasoning to taste. Serve the seafood chowder hot, garnished with fresh parsley.
