Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 4 cups clam juice or seafood stock
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 lb mixed seafood (such as shrimp, fish, scallops, and/or clams), chopped
  • Fresh parsley for garnish

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the diced potatoes and seafood stock or clam juice to the pot. Bring to a simmer and cook until the potatoes are tender.
  3. Stir in the heavy cream, milk, thyme, salt, and pepper. Simmer for another 5-10 minutes.
  4. Add the mixed seafood to the pot and cook until seafood is cooked through, about 5 minutes.
  5. Adjust seasoning to taste. Serve the seafood chowder hot, garnished with fresh parsley.
  6. Enjoy!
