Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Fold in the chopped sage and dried apricots until evenly distributed.
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
Flatten each cookie slightly with the back of a spoon.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
