Qoğal is a delicious Azerbaijani pastry that is typically made with flour, eggs, sugar, butter, and sometimes filled with nuts, poppy seeds, or dried fruits. It is a popular treat enjoyed during holidays and special occasions in Azerbaijan.

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter softened
  • 2 eggs
  • 1/2 cup chopped walnuts (or any other filling of your choice)
  • 1 teaspoon baking powder
  • 1/4 cup milk
  • Pinch salt
  • 1 egg yolks for brushing

Method
 

  1. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, until a soft dough forms.
  5. Divide the dough into 4 equal parts and shape each part into a ball.
  6. Flatten each ball into a circle and place a spoonful of chopped walnuts in the center.
  7. Fold the dough over the filling to form a half-moon shape and pinch the edges to seal.
  8. Place the qoğal on a baking sheet lined with parchment paper.
  9. Brush the tops of the qoğal with the egg yolk for a shiny finish.
  10. Bake in a preheated oven at 350°F (180°C) for about 25-30 minutes or until golden brown.
  11. Allow the qoğal to cool slightly before serving.
