Pudina chutney, also known as mint chutney, is a popular condiment in Indian cuisine. Rinse the mint leaves, coriander leaves, and green chilies under cold water to remove any dirt.
In a blender or food processor, add the mint leaves, coriander leaves, green chilies, garlic, and onion (if using). Blend until you get a coarse paste.
Add lemon juice, salt, cumin powder, and sugar (if using) to the mixture. Blend again until all the ingredients are well combined.
Slowly add water, a little at a time, until you reach your desired consistency. Blend until the chutney is smooth and creamy.
Taste and adjust the seasoning according to your preference. You can add more salt, lemon juice, or spices if needed.
Transfer the chutney to a clean, airtight container and refrigerate for about 30 minutes before serving to enhance the flavors.
