Ingredients
  

  • 1/2 pound prawns peeled and deveined
  • 1 egg white
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • Vegetable oil for frying

Method
 

  1. In a food processor, blend the prawns until they form a smooth paste.
  2. Add the egg white, cornstarch, salt, and sugar to the prawn paste. Mix well to combine.
  3. Take a small amount of the prawn mixture and flatten it into a thin disc on a baking sheet. Repeat with the remaining mixture.
  4. Heat the vegetable oil in a deep fryer or a large pan to 180°C (350°F).
  5. Carefully lower the prawn discs into the hot oil, a few at a time, and fry until they puff up and turn light golden brown. This should only take a few seconds.
  6. Remove the prawn crackers from the oil using a slotted spoon and drain on paper towels to remove excess oil.
  7. Repeat the frying process with the remaining prawn discs.
  8. Serve the freshly fried prawn crackers hot and enjoy as a tasty snack or appetizer.
