In a food processor, blend the prawns until they form a smooth paste.
Add the egg white, cornstarch, salt, and sugar to the prawn paste. Mix well to combine.
Take a small amount of the prawn mixture and flatten it into a thin disc on a baking sheet. Repeat with the remaining mixture.
Heat the vegetable oil in a deep fryer or a large pan to 180°C (350°F).
Carefully lower the prawn discs into the hot oil, a few at a time, and fry until they puff up and turn light golden brown. This should only take a few seconds.
Remove the prawn crackers from the oil using a slotted spoon and drain on paper towels to remove excess oil.
Repeat the frying process with the remaining prawn discs.
Serve the freshly fried prawn crackers hot and enjoy as a tasty snack or appetizer.
