Ingredients
  

  • 1 lb goat meat chicken, or fish (cut into pieces)
  • 1 onion (chopped)
  • 2-3 scotch bonnet peppers (chopped, adjust to your spice preference)
  • 2 cloves garlic (minced)
  • 1- inch piece ginger (minced)
  • 1 teaspoon ground crayfish (optional)
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 6 cups water or broth
  • fresh cilantro chopped or parsley for garnish

Method
 

  1. In a large pot, combine the meat, onions, peppers, garlic, ginger, crayfish, cayenne pepper, cumin, thyme, salt, and pepper.
  2. Add water or broth to cover the ingredients and bring to a boil.
  3. Reduce heat to low, cover, and simmer for about 1-2 hours until the meat is tender.
  4. Adjust seasoning to taste and add more water if needed.
  5. Serve hot, garnished with chopped cilantro or parsley.
  6. Enjoy!
