Preheat your deep fryer or a pot with oil to 350°F (180°C).
Divide the pizza dough into 4 equal portions and roll each portion out into a circle.
On one half of each dough circle, layer cheese, tomato sauce, and your choice of fillings, leaving a border around the edge.
Fold the other half of the dough over the filling and press the edges together to seal.
Crimp the edges with a fork to ensure they are well sealed.
Carefully lower each panzarotti into the hot oil and fry until golden brown, about 3-4 minutes per side.
Remove from the oil and let drain on paper towels. Season with salt and pepper.
