Pan-fried scallops are a dish made from fresh sea scallops that are seasoned with salt and pepper and then seared in a hot skillet with butter and olive oil until they are golden brown and cooked through.
Rinse the scallops and pat them dry with paper towels. Season them with salt and pepper on both sides.
Heat a large skillet over medium-high heat. Add the butter and olive oil, and swirl to coat the bottom of the pan.
Arrange the scallops in the skillet in a single layer, with space between them. Cook for about 2-3 minutes on each side, or until they are golden brown and cooked through.
Remove the scallops from the skillet and transfer them to a serving dish. Squeeze lemon wedges over the scallops and sprinkle with green onions.
