In a large bowl, combine the rolled oats, milk, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well to combine all the ingredients.
Divide the oat mixture evenly into 4 jars or containers with lids.
Seal the jars or containers and refrigerate overnight, or for at least 4 hours, to allow the oats to soften and absorb the liquid.
In the morning, give the overnight oatmeal a good stir. Add more milk if you prefer a thinner consistency.
Top each serving with your favorite toppings such as sliced fruits, nuts, seeds, or dried fruit.
