  • 1 egg
  • 1 tablespoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tablespoon baking soda
  • 1/2 tablespoon cinnamon
  • 1/4 tablespoon salt
  • 1 1/2 cups old-fashioned oats
  • 1/2 cup chocolate chips
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins

Method
 

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the oats, chocolate chips, walnuts, and raisins until evenly distributed throughout the cookie dough.
  7. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
