- Heat vegetable oil in a pan over medium heat. Add the minced garlic and shallots, and sauté until fragrant.
- Add the ground pork to the pan and cook until browned.
- Stir in the chopped tomatoes and red chili peppers. Cook until the tomatoes are soft and the mixture is well combined.
- Add fish sauce, shrimp paste (if using), and sugar. Stir well.
- Let the mixture simmer for about 10-15 minutes until the flavors meld together.
- Taste and adjust seasoning if needed.
- Serve hot with fresh cilantro, vegetables, and rice.
