Ingredients
  

  • 2 cups white rice
  • 1 can diced tomatoes (14 oz)
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (such as queso fresco or cheddar)
  • 1 avocado sliced optional

Method
 

  1. Cook the white rice according to package instructions.
  2. In a separate pan, sauté the chopped onion and minced garlic until softened.
  3. Add the diced tomatoes, cumin, chili powder, salt, and pepper to the pan. Cook for about 10 minutes, allowing the flavors to meld together.
  4. Serve the cooked rice in bowls, and top each with a generous spoonful of the tomato mixture.
  5. Sprinkle shredded cheese on top of each bowl.
  6. Garnish with sliced avocado if desired.
  7. Enjoy!
