- Cook the white rice according to package instructions.
- In a separate pan, sauté the chopped onion and minced garlic until softened.
- Add the diced tomatoes, cumin, chili powder, salt, and pepper to the pan. Cook for about 10 minutes, allowing the flavors to meld together.
- Serve the cooked rice in bowls, and top each with a generous spoonful of the tomato mixture.
- Sprinkle shredded cheese on top of each bowl.
- Garnish with sliced avocado if desired.
