  • Soak the rice: Rinse the rice several times until the water is mostly clear. Cover with plenty of water and soak for at least 4 hours, preferably overnight.
  • Steam: Drain well. Place the rice in a cheesecloth-lined steamer and steam over simmering water for 20–30 minutes, turning it once, until tender and translucent. Don’t let the rice touch the water.
  • Make the coconut mixture: Gently heat 1 cup coconut milk, the sugar, and salt in a saucepan until dissolved. Do not boil.
  • Season the rice: Put the hot steamed rice in a bowl and pour the warm coconut mixture over it. Stir gently, cover, and let sit for 20–30 minutes so the rice absorbs the liquid.
  • Prepare the sauce: Heat the remaining ½ cup coconut milk with the sugar and salt. Stir in the cornstarch slurry and cook gently for 1–2 minutes, until slightly thickened.
  • Serve: Peel and slice the mangoes. Divide the sticky rice and mango among four plates, drizzle with coconut sauce, and add sesame seeds or crispy mung beans if desired.
    Serve warm or at room temperature.
