Ingredients
  

  • 2 cups mashed potatoes (cooled)
  • 1/4 cup butter softened
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • Additional flour for rolling

Method
 

  1. In a large mixing bowl, combine the mashed potatoes, butter, sugar, and salt.
  2. Gradually add the flour to the potato mixture, mixing until a soft dough forms.
  3. Divide the dough into 8 equal portions and shape them into balls.
  4. On a lightly floured surface, roll out each ball into a thin circle, about 8 inches in diameter.
  5. Heat a griddle or large skillet over medium heat.
  6. Cook each lefse round on the griddle for 1-2 minutes on each side until lightly browned.
  7. Remove from the griddle and place on a clean towel to cool.
  8. Serve the lefse warm with your favorite toppings, such as butter, sugar, cinnamon, or jam.
  9. Enjoy!
