Gradually add the flour to the potato mixture, mixing until a soft dough forms.
Divide the dough into 8 equal portions and shape them into balls.
On a lightly floured surface, roll out each ball into a thin circle, about 8 inches in diameter.
Heat a griddle or large skillet over medium heat.
Cook each lefse round on the griddle for 1-2 minutes on each side until lightly browned.
Remove from the griddle and place on a clean towel to cool.
Serve the lefse warm with your favorite toppings, such as butter, sugar, cinnamon, or jam.
