In a large bowl, combine the ground lamb, onion, garlic, cumin, coriander, paprika, cinnamon, salt, pepper, and parsley. Mix well until all the ingredients are evenly incorporated.
Divide the mixture into 12 equal portions and shape each portion into a long sausage shape around the wooden skewers.
Heat olive oil in a grill pan or on a grill over medium-high heat.
Grill the koftas for about 8-10 minutes, turning occasionally, until they are cooked through and nicely browned on all sides.
Serve the lamb koftas hot with a side of yogurt sauce, pita bread, and a salad.
