Ingredients
  

  • 1 cup black rice
  • 1/2 cup short-grain white rice
  • 1/2 cup mixed beans (such as soybeans, black beans, adzuki beans)
  • 4 cups water
  • 1 tablespoon sesame oil
  • Salt to taste
Optional for garnish:
  • nuts (such as walnuts or pine nuts)
  • dried fruits (such as raisins),
  • sesame seeds

Method
 

  1. Rinse the black rice and white rice under cold water until the water runs clear. Drain well.
  2. In a large pot, combine the mixed beans and water. Bring to a boil, then reduce heat and simmer for about 30 minutes until the beans are tender.
  3. Add the rinsed rice to the pot with the beans. Stir well and bring to a simmer.
  4. Cover the pot with a lid and let it cook for about 20-25 minutes, or until the rice is cooked and the water is absorbed.
  5. Remove from heat and let it sit covered for an additional 5 minutes.
  6. Drizzle sesame oil over the cooked rice and beans and gently fluff with a fork to mix.
  7. Season with salt to taste and mix well.
  8. Serve the Korean Purple Rice and Beans in bowls, garnished with nuts, dried fruits, and sesame seeds if desired.
  9. Enjoy!
