Rinse the black rice and white rice under cold water until the water runs clear. Drain well.
In a large pot, combine the mixed beans and water. Bring to a boil, then reduce heat and simmer for about 30 minutes until the beans are tender.
Add the rinsed rice to the pot with the beans. Stir well and bring to a simmer.
Cover the pot with a lid and let it cook for about 20-25 minutes, or until the rice is cooked and the water is absorbed.
Remove from heat and let it sit covered for an additional 5 minutes.
Drizzle sesame oil over the cooked rice and beans and gently fluff with a fork to mix.
Season with salt to taste and mix well.
Serve the Korean Purple Rice and Beans in bowls, garnished with nuts, dried fruits, and sesame seeds if desired.
