  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup molasses
  • 1 cup mixed dried fruits (such as raisins, currants, and mixed peel)
  • 1/2 cup melted butter
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • cheddar cheese slices (to serve)

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large mixing bowl, combine the flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.
  3. In a separate bowl, mix together the melted butter, molasses, milk, and vanilla extract until well combined.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring until a thick batter forms.
  5. Fold in the mixed dried fruits until evenly distributed in the batter.
  6. Pour the batter into the lined baking pan, spreading it out evenly.
  7. Bake in the preheated oven for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove from the oven and let it cool completely on a wire rack.
  9. Slice the cooled bun into thick slices and serve each slice with a generous piece of cheddar cheese on top.
